Blueberry Coffee Cake with Streusel Topping

Preparing this delicious morning treat is actually quite simple. Not as simple as making a reservation at the Inn and having us make it for you... but some people just have to do things for themselves.

Cake
2 cups flour
1 cup sugar
1 T. baking powder
1 tsp salt
1/3 cup softened margarine
1 cup milk
1 egg
1 cup blueberries, fresh or frozen

Preheat oven to 350. Beat all ingredients, except blueberries in a large bowl on a low spend for 30 seconds, then beat on a medium speed for 2 minutes, scraping bowl occasionally.

Grease a 9X9 pan or 10” pie plate. Spread half the batter in the pan. Sprinkle 1 cup of blueberries over batter, then top with the rest of the batter. Add Streusel Topping, below, then bake in oven for 40 minutes.

Streusel Topping

½ cup chopped walnuts
1/3 cup brown sugar
¼ cup flour
½ tsp. cinnamon
1 T. margarine

Mix all ingredients together till crumbly. Sprinkle on top of cake.

Glaze
Mix 1 cup of confectioners’ sugar, 2 T. milk and ¼ tsp. vanilla. When cake is cool, drizzle glaze over top of cake.
